Director of Food and Beverage
Austin, Texas - Full Time

The (Location) is looking for an extroverted and out-going Director of Food and Beverage that is ready to step into the Director role to lead our Food and Beverage team and ensure we are delivering an upscale, exceptional culinary experience. JOB SUMMARY:
The Director of Food and Beverage will develop, source and implement food and beverage programs specific to brand concepts. The director will develop and identify recipes and portion specifications in accordance with guest feedback, local influences, product specifications, ease of preparation and budgetary constraints. In addition, this position will help identify product sources and help negotiate purchasing specifications. The Director of F and B will train hotel staff and help implement approved programs. The Director of F and B will make periodic and regular inspections of hotels to observe quality of food preparation and services, food appearance, cleanliness and sanitation of production and service areas, equipment, employee appearance and production efficiency. 

QUALIFICATION STANDARDS
EDUCATION and EXPERIENCE

  • Bachelor’s degree required, advanced degree or certification in a related field a plus.
  • 8 – 10 years F and B experience.
  • Hotel experience preferred.
  • Hands-on experience negotiating and executing supplier agreements.
  • Appropriate local and state Alcohol and Health Department/Food Handlers knowledge and certifications.
  • Excellent written and verbal communication skills.
  • Customer Service background.
  • Proficient knowledge of Microsoft Word, Excel, Internet Explorer and e-mail.
  • Experienced in budgeting, forecasting, P&Ls, scheduling, inventory and production flow.
  • Must have strong banquets/meetings/events experience.

PHYSICAL REQUIREMENTS

  • Flexible and long hours sometimes required.
  • Light work - Exerting up to 20 pounds of force occasionally, and/or up to 10 pounds of force frequently or constantly to lift, carry, push, pull or otherwise move objects.
  • Travel required at times

  • Must be able to build strong relationships with hotel management teams and corporate departments.

DUTIES AND RESPONSIBILITIES

FOOD and BEVERAGE DEVELOPMENT & IMPLIMENTATION RESPONSIBLITY

  • Develop food and beverage brand specific programs.
  • Creative menu development.
  • Train hotel F and B employees and ensure consistent implementation of programs.
  • Identify product vendors and help negotiate standards of quality and cost.
  • Develops new sources where vendors are inadequate.
  • Ensures quality meets determined standards.
  • Periodic and regular inspection of F&B programs to ensure quality.
  • Works closely with Operations, Marketing, Development and Construction departments.
  • Produces status reports and updates as required or needed.
